Who knew what wondrous things you can do with a cauliflower roasted and flavoured with cumin and accompanied by almond purée beetroot crushed with Buffalo milk curds or butternut squash in a moreish rich risotto with spelt rice. It harks back to a true country house kitchen with head chef Ben Abercrombie serving a menu shaped by the lifecycle of the estate.
