French Cheesy Mashed Potatoes. Add the sour cream. Partially cover saucepan with lid and bring potatoes to boil over high heat.
Sprinkle in the minced garlic salt and pepper. Put the potatoes in a medium pot and add enough cold water to cover by 2 inches. DO NOT overwork the potatoes.
Cook for 20-25 minutes or until very tender.
Add grated cheese in small batches stirring between each addition until cheese is fully melted and incorporated. Partially cover saucepan with lid and bring potatoes to boil over high heat. Garnish with chopped fresh chives and serve hot. Add the sour cream.
